1 medium head cauliflower

1/3 cup chicken broth or vegetable broth

2 tablespoons reduced fat sour cream

Salt & pepper

 

Place the cauliflower florets with ¼ cup water and chicken or vegetable broth in pot, cover and bring to a boil on low heat, or until completely tender.

 

Placed the cooked cauliflower in a food processor.  Add chicken broth, sour cream, salt and pepper; puree until smooth.  Serve Garnished with sliced chives.
