Strawberry Banana Overnight Oats

SERVING SIZE = ABOUT ¼ CUP
These strawberry banana overnight oats are perfect for a quick breakfast. Simply combine the ingredients the night before and then store in the refrigerator and serve in the morning.
INGREDIENTS
2 CUPS ROLLED OATS
2 CUPS UNSWEETENED ALMOND MILK
¼ CUP PURE MAPLE SYRUP
E2 SMALL BANANAS, PEELED AND SLICED
1 ¼ CUPS FRESH STRAWBERRIES, CHOPPED
½ CUP CHOPPED PECANS
2 TABLESPOONS GROUND FLAXSEED
1TEASPOON GROUND CINNAMON
1 TEASPOON ALMOND EXTRACT
PINCH OF SALT
Combine all of the ingredients in a large mixing bowl and stir well. Spoon the mixture into a casserole dish, cover with plastic and refrigerate overnight. Spoon into bowls in the morning and serve cold, topped with granola if desired.
